"Can you guys even stand this beautiful Veggie Burger in all its glory?! That fabulous veggie patty was made by yours truly?and I loaded this mother with alfalfa sprouts, mixed greens, sweet pickles, red onions, vegan thousand island dressing and tomatoes?. Even if you nixed the bread this would be a great salad! Oooh how I love options☝️. Usually I buy frozen veggie burgers, but not anymore because these are excellent! (well maybe I'll still buy the frozen ones on days I'm feeling laze balls america lol?).
The Veggie Burger
2c low sodium vegetable broth
1 sweet potato, chopped
1c uncooked quinoa
1c chickpeas, cooked
1 small zucchini, grated
5 1/2 Tbsp ground flaxseeds
Chopped basil
Salt and pepper to taste
1tsp thyme
2 Tbsp EVOO
Put broth, sweet potato and quinoa in a medium sauce pain and bring to a boil. Cover, reduce to low heat and simmer for 25mins. Once its done transfer to a bowl so it cools.
Once cooled put in chickpeas, zucchini, ground flax, salt/pepper/thyme and basil.
Using a fork mash sweet potatoes and chickpeas incorporating all spices into your quinoa mixture. Form 8 patties.
In a large skillet heat up EVOO (extra virgin olive oil) and Cook patties 4 to 5 mins on each side. Then assemble with your fave fixings?
