"With the sniffles and coughs in a couple of my wee ones, I made this immune boosting soup to get em' back into tip top shape.
We often think spring is here and virus free, when in fact it's a time when lots of people get sick. change of season
RECIPE:
1 large butternut squash or 2 small ones, roasted
6 carrots, roasted
1 onion, diced and sautéed in olive oil
3 garlic cloves, finely chopped
1" piece of ginger, finely grated
1 tsp tumeric
Salt and pepper to taste
Add roasted veggies into pot with onion, garlic and ginger. Top with 6 cups of water. I added 1/2 organic veggie bouillon cube. Simmer for an hour. Blended in my @blendtec to a creamy perfection. Topped with radish sprouts, cayenne pepper and black sesame seeds Enjoy.
