I love oat and jam bars and I make it for my kids as well. Love this recipe and I will certainly use this recipe next time I make the bars! Looks sooo good!

INGREDIENTS

For the chia jam:
1.5 cups frozen raspberries and blackberries
2 Tbsp chia seeds
2 Tbsp water
1/4 cup maple or agave syrup

For the oat crust:
2 cups flakey porridge oats
1/4 cup almond meal
1/4 cup desiccated coconut
1 ripe banana
1 tsp cinnamon
1/4 cup soft coconut fat
3/4 cup peanut butter
1/4 cup agave or maple syrup
2 Tbsp sunflower seeds or almond flakes

DIRECTIONS

For the chia jam:
Combine and simmer berries, seeds, water and syrup until thick and jelly-like (approx. 15 minutes on low heat and then let it cool down).

For the oat crust:
Combine oats, almond meal, coconut, banana, cinnamon, coconut fat, peanut butter, agave and sunflower seeds. Mix it with a fork smashing the banana as you do so until well combined and then press half of the oat mixture firmly into a 9×9 inch brownie pan lined with aluminium foil for easy removal.

Bake the bottom crust at 180°C for 10 minutes. Then take out the crust and spread the strawberry jam on top and top it with the remaining oat mixture. Smooth out the top as best as you can using a spatula. Bake again at 180°C for 30 minutes or until golden brown.
