Vegan Avocado Ice Cream Sandwiches

approximately 24 Cookies:
2 cups almond flour
1/2 cups coconut butter (melted )
1tbl spoon ground flax seed
1/2 cup maple syrup
1tea spoon vanilla extract
1/2 tea spoon salt
1 tea spoon baking soda
1/3 85% dark chocolate bar (crushed)
Vegan Avocado Ice Cream (or preferred vegan ice cream flavor)
Mix all dry ingredients. Then all liquids.
Mix well all together till batter starts to thicken. Set batter into the fridge to cool down for 15 min. Then bake in preheated oven (350°F) for 20 min or when golden brown. Once cookies have cooled, scoop ice cream onto the bottom half of one cookie and then place another cookie on top (bottom down).
