Move over breakfast burrito, there’s a new kid in town. Welcome the Breakfast Taco.
Ingredients:
- coconut oil
- 2 whole wheat tortillas
- 1/2 a tomato, chopped
- 1/8 purple onion, chopped
- handfull of baby kale
- 1/4 cup black beans
- 1/4 cups corn
- 2 eggs
- 1/2 an avocado
- 1 jalepeno, sliced
- 1 lime
1. mix tomato and onion, put aside
2. mix corn and black beans, heat in pan for abour 45 seconds, put aside
3. fried 2 eggs in coconut oil (or oil of choice) on low, cover and let fry until completely white
4. slice avocado into 4 strips, put aside
5. place 2 tortillas, add tomato/onion mixture, then add corn/black bean mixture
6.place fried eggs onto tortilla, then place avocado on top, then place jalepenos on top
7. add lime juice for taste
8. enjoy!
