  • For the Gaucamole
  • 1 ripe avocado, halved and pitted
  • 1 ripe champagne mango, peeled and diced
  • 1 jalapeño, minced
  • 1/2 bunch cilantro, chopped
  • 1 garlic clove, minced
  • 1/4 small red onion, diced
  • juice of one lime
  • 1/2 teaspoon salt (or more, if needed, to taste
  • For the Turkey Burgers:
  • 1 pound ground turkey
  • 1 yellow onion, diced
  • 1 tablespoon butter
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 tablespoon olive oil, divided
  • 4 hamburger buns, toasted

Method

  • Step 1

    Make the guacamole. Add the garlic and red onion to a medium bowl and cover with lime juice and salt. Let sit for about 5 minutes. Add the mango, jalapeño and cilantro and stir to combine. Cover and set aside in fridge while you prepare the burgers.

  • Step 2

    In a medium frying pan, melt butter over medium heat. Add onion and cook for 5-7 minutes, or until golden brown. Remove from heat and let cool.

  • Step 3

    Place breadcrumbs in a large bowl, then add milk and let soak for 5 minutes. Add cumin, chili powder and onions and stir until combined. Add turkey and mix until well combined. Season to taste with salt and pepper, then divide the mixture into 4 patties.

  • Step 4

    In a large frying pan, heat olive oil over medium heat. Add burgers and cook for about 3 minutes per side, then cover the pan and cook for another 5-7 minutes.

  • Step 5

    Once cooked through, add the burgers to buns, top with guacamole and serve.
