Whole Wheat Carrot Apple & Walnut Muffins

Ingredients
2 mashed very ripe banana
1 sweet apple, finely grated
2 carrots, finely grated
2/3 cup rolled oats
1/2 cup almond meal
1 cup whole wheat flour
1/2 cup milk of choice
1.5 flax eggs or just 1 egg
1/4 cup olive oil
1/2 cup brown sugar
1/2 tsp sea salt
1.5 tsp baking soda
1/2 tsp ground cinnamon
raw walnuts for topping
Whisk an egg with sugar and milk, add mashed bananas and olive oil. In a separate bowl combine rolled oats, almond meal, whole wheat meal, baking soda, cinnamon and salt. Add dry ingredients into liquid ingredients and whisk together to combine. In the end add grated carrots and apple. Grease your muffin tin, divide batter evenly and top with crushed walnuts. Bake at 375F for 35 min until a toothpick inserted into the center comes out clean.
