Loving these bacon cups!
How do you like your eggs? Sunny side up? Or perhaps in a CUP?
A thin layer of toast bread, shredded cheese, ring of grilled bacon and egg on top! Pinch of salt, sprinkled with fresh chives and chilli flakes..so simple yet super delicious, try it for a nutritious breakfast or quick brunch :)

Cooking time: 10-15min
INGREDIENTS:
2 slices of toast
4 thin slices of bacon
50gr gouda or emmentaler cheese (any other sandwich cheese will do just fine as well)
2 medium sized eggs
Fresh chives - finely chopped
A pinch of salt
Freshly ground black pepper
Chilli flakes
INSTRUCTIONS:
Preheat the oven to 200 degrees Celsius (390 degrees F).
Grease the muffin tin or cups generously with organic lard or use the olive oil instead.
Heat the skillet and cook the bacon aprox 30sec on each side, just to exceed the extra grease but allow it to remain flexible, not too crispy or you will not be able to make rings of it.
Set aside on a paper towel.
Cut the toast bread and put it on the bottom of muffin tin or cup.
Use 2 slices of bacon to form the ring on the bread in each tin/cup.
Put some shredded cheese and finally crack the egg on top of it.
Cook in the oven for 10-15min, depending on how you prefer your yolks (15min should be enough for a cooked yolk).
Carefully take out from the tin/cup, use the table spoon for easier handling.
Serve with finely chopped fresh chives, pinch of salt, freshly ground black pepper and sprinkle with chilli flakes for spicy kick.
