RECIPE:
Ingredients
200g soba noodles, boiled in salted water for 4 minutes, drain well
200g Kimchi, roughly chopped
1 large ripe avocado, thinly sliced
4-5 nori sheets
sesame seeds, for topping
spring onion, for topping
soy sauce, for dipping
Method
Place the nori sheet on a sushi rolling mat and lay the soba noodles length-ways on top, leaving a 2-cm gap at the end. Place the kimchi and sliced avocado in a line at the one end, as you would with sushi. Roll the nori sheet up as tightly as possible, putting a bit of water at the empty part at the end to seal it. Repeat with the other nori sheets. When ready, sprinkle with sesame seeds and spring onion and serve with soy sauce. Enjoy!
